Going bananas

The whole week I was perfecting vanilla butter cupcakes so I decided to bake something else instead – Banana cuppies. Here’s the modified recipe:

 Ingredients for banana cake

 Dry mixture 
 3 cups all-purpose flour
 2 cups sugar
 1 teaspoon baking powder
 1/2 teaspoon salt

 Wet mixture
 3 medium bananas
 1/2 cup buttermilk
 3 large eggs
 3/4 cup vegetable oil
 1 teaspoon vanilla

L-R: Add the buttermilk to the sliced bananas  and then pour the wet mixture to the dry mixture and fold. Distribute the mixture to cups and also add a banana disk on top for extra flavour, texture and colour.

 

Ingredients for frosting

1/2 package of Philly cream cheese
1/4 stick butter
200g sifted icing sugar

Beat butter and cream cheese until creamy. Add in sifted icing sugar until the right sweetness and consistency. I didn’t want the frosting to be too thick.

 

The end product: The baked and naked banana cupcakes…

… And less naked with frosting.

The outcome: My mistake was getting Montel bananas instead of local pisang emas which I am sure are  sweeter. I shouldn’t have mashed the bananas too smoothly because the batter became too fine. Less icing sugar and more cream cheese. The next time, I might want to try a local banana cake recipe instead.

    h3: wah! i definitely don’t know how to make choux pastry! i think it’ll be cheaper, safer and more delicious to get it from papa beard instead.

    Im sure it will be nicer with pisang emas; bananas here are like in Fresno, not sweet but huge.bleurk for chiquita banans
